How to think about a day here
Fort Kochi is small enough to walk end to end in under an hour, which changes how you should plan it. The mistake most first-time visitors make is treating it as a list of ticketed sights to be cleared; almost everything worth seeing is free, outdoors and better at a particular hour than at any other.
The waterfront is a late-afternoon and sunset proposition — that is when the fishing nets are worked, the promenade fills and the light is worth the walk. Interiors are a morning job: churches, the museum and the galleries are cooler and emptier before eleven, and several close in the middle of the day. Mattancherry, with the palace and the synagogue, is a separate half-day and both of its headline sights close on days that catch people out — confirm before you go rather than after.
Evening belongs to performance. A Kathakali or Kalaripayattu show with the make-up demonstration beforehand is the one thing here that is genuinely of this place and cannot be done from a deckchair.
